Ube Brownies
Pronounced "Ooh-Bay", these purple yam brownies are guaranteed to make you eat more than one!

Ingredients:
1 1/4 cups all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted
3/4 cup + 2 tablespoons light brown sugar
1 large egg, room temperature
2 teaspoons Ube extract / flavoring
Instructions:
Preheat oven to 350 degrees.
Lightly grease 8x8 inch baking pan and line with parchment paper.
Sift together flour, baking powder and salt and then mix with a whisk. Set aside.
In a separate bowl, mix together brown sugar and melted butter until it is lighter in color.
Add egg and Ube flavoring. Mix until smooth.
Gradually add and gently fold in the flour mixture until there are no traces of flour.
Transfer batter to a baking pan and spread evenly.
Bake for 16 to 18 minutes (for fudgy brownies, bake 14 to 15 minutes).
Remove from oven and let brownies rest for about 10 minutes. Enjoy!
*Optional: If you like, you can sprinkle powdered sugar over brownies.
