Strawberry Crumb Lemon Brownies

Ingredients:
Lemon Brownies
3/4 cup all purpose flour
1/2 teaspoon baking powder
1/2 cup salted butter, room temperature
3/4 cup granulated sugar
2 large eggs
2 to 3 teaspoons lemon zest
1 tablespoon lemon juice
Strawberry Crumb Topping
20-25 golden Oreo cookies
3 oz packet of strawberry jello
1/4 cup butter, melted
Lemon Glaze
3/4 cup powdered sugar
1 1/2 tablespoons lemon juice
Lemon Brownies
Lightly grease 8x8 inch baking pan and line with parchment paper.
In a bowl, mix together flour and baking powder. Set aside.
In a separate bowl, mix together butter, sugar and lemon zest until light and fluffy.
Add eggs (one at a time, mixing between each addition) and lemon juice.
Add dry mixture to the wet mixture and combine well.
Transfer batter to a baking pan and spread evenly.
Add strawberry crumb topping and lightly press into lemon batter.
Bake for 20 to 25 minutes.
Remove from oven and let brownies cool for about 10 minutes.
Lemon Glaze
Whisk together powdered sugar and lemon juice
Drizzle glaze over brownies. Enjoy!
Instructions:
Strawberry Crumb Topping
Preheat oven 350 degrees. Line baking sheet with parchment paper and set aside.
Add Oreos to a food processor and pulse a few times.
Transfer Oreo crumbs to a bowl and add butter and Jell-O mix. Combine well.
Spread the crumbs on the baking sheet evenly and bake in the oven for about 5 to 8 minutes.
Remove baking sheet and gently break up the dry topping. Set aside and allow to completely cool before adding to lemon brownie mix.
