Pandan Cookies
These sweet, earthy vanilla flavored cookies are also called Pandan Melon Pan Cookies.
COOKIES
Ingredients:
1 cup + 2 tablespoons all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup unsalted butter, room temperature
1/2 cup + 2 tablespoons granulated sugar
1 egg, room temperature
1 teaspoon pandan flavoring
Sugar for rolling
Instructions:
In a bowl add flour, baking powder and salt. Mix well.
In a separate bowl, cream together butter and sugar. Add egg and pandan flavoring and blend well.
Add dry flour mix to wet ingredients and blend until fully incorporated.
Scoop out cookie dough and roll into smooth balls. Take a butter knife or bench scraper and make horizontal and vertical impressions on top of each cookie and place back on the cookie sheet.
Pour extra sugar in a small bowl, roll cookies to coat and place back on baking sheet.
Cover baking sheet with plastic wrap and place in the refrigerator for about 2 hours.
Preheat oven 350 degrees. Line the baking sheet with parchment paper and set aside.
Remove cookies from the refrigerator and place cookie dough balls on a parchment lined baking sheet. Bake cookies for 13 minutes.
Remove cookies from the oven and allow them to cool for about 10 minutes. Enjoy!
