Key Lime Thumbprint Cookies
Sweet and tart, these delicious Key Lime Thumbprint Cookies will melt in your mouth.
Ingredients:
Graham Cracker Cookies
3/4 cup all purpose flour
3/4 cup graham cracker crumbs
1/4 teaspoon ground cinnamon
1/4 teaspoon baking powder
1/2 teaspoons baking soda
1/2 cup unsalted butter, room temperature
1/2 cup granulated sugar
1/2 teaspoons vanilla extract
1 egg yolk
Key Lime Cream Cheese Filling
8 oz cream cheese, room temperature
1/2 cup powdered sugar
1 tablespoon key lime zest
1 tablespoon key lime juice (I used Nellie and Joe's Key West Lime Juice)
Instructions:
Graham Cracker Cookies
Preheat oven 375 degrees. Line baking sheet with parchment paper and set aside.
In a bowl, add flour, graham cracker crumbs, cinnamon, baking soda and baking powder. Mix well.
In a separate bowl, cream together butter and sugar. Add vanilla and egg yolk and blend well.
Add dry flour mix to wet ingredients and blend until dough sticks together.
Roll dough into 2 inch sized balls and roll in granulated sugar to coat.
Place cookie dough on baking sheet and bake for 7 to 8 minutes.
As soon as you remove cookies from oven, gently press a spoon in the center of the cookie, creating a well. Allow cookies to cool for about 5 minutes.
Transfer key lime filling into piping bag and pipe filling in the well that you've created. You can also use a spoon to drop the filling in the well. Enjoy!
Key Lime Cream Cheese Filling
In a bowl, use hand mixer and mix cream cheese until smooth. Add powdered sugar and blend until completely incorporated.
Add lime juice and zest and mix. Set aside.
