Key Lime Pie
PIESDESSERT
Ingredients:
Crust
1 heaping cup graham cracker crumbs
2 tablespoons sugar
1/2 stick (4 tablespoons) unsalted butter, melted and cooled.
Filling
1 (14 ounce ) can of sweetened condensed milk
4 egg yolks
1/2 cup of bottled key lime juice
Optional, whipped topping
Instructions:
Crust
Preheat oven 350 degrees.
In a bowl, combine graham cracker crumbs, sugar and melted butter with a fork. Pour crumbs in a 9 inch pie plate and press mixture evenly onto the bottom and up the sides of the pie plate.
Place pie plate in the oven and bake for 13 minutes. Remove from the oven and let the crust cool. Do not turn the oven off.
Filling and Baking the Pie
In a bowl, whisk together condensed milk and egg yolks until well combined. Add key lime juice and whisk until all ingredients are fully combined.
Pour key lime filling into the cooled pie crust and place pie inside the oven. Bake for 15 minutes. Remove from oven and let pie completely cool (filling will set).
Loosely place a piece of paper towel over the pie, loosely cover with plastic wrap and place in the refrigerator for at least 8 hours.
**Optional: before serving, you can add a dollop of whipped topping**
