Honey Bun Cookies

COOKIES

Ingredients:

Cookies

  • 1 1/4 cup + 2 tablespoons all purpose flour

  • 1 teaspoon cornstarch

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, room temperature

  • 6 tablespoons granulated sugar

  • 1/4 cup brown sugar

  • 1 egg, room temperature

  • 1 1/2 teaspoon vanilla extract

Honey Butter Glaze

  • 2 tablespoons unsalted butter, room temperature

  • 1/2 cup powdered sugar

  • 1 tablespoon honey

  • 1 tablespoon milk (any kind)

Instructions:

Cookies

  1. In a bowl, add flour, cornstarch, baking soda, baking powder, cinnamon and salt. Mix well.

  2. In a separate bowl, cream together butter and sugars for 4 minutes. Add vanilla and egg and blend well.

  3. Add dry flour mix to wet ingredients and blend until dough comes together (don't over mix).

  4. Using a 3 tablespoon cookie scoop, scoop dough and place on a parchment lined baking sheet. Press each down each dough ball to 1/2 inch thickness.

  5. Grab a butter knife or chopsticks and starting in the middle of the cookie, make a swirl.

  6. Cover the baking sheet with plastic wrap and chill cookies in the freezer for about 10 minutes.

  7. Preheat the oven at 350 degrees.

  8. Remove the baking sheet from the freezer, remove plastic wrap, place inside the oven and bake for 13 minutes.

  9. As soon as you remove cookies from the oven you might need to go back over the swirls with a butter knife or chopsticks. Allow cookies to cool for about 10 minutes on the baking sheet.

  10. Once the cookies are completely cooled, spread honey butter glaze on top of each cookie. Enjoy!

Honey Butter Glaze

  1. In a bowl, use a hand mixer with a whisk attachment and mix butter, powdered sugar, honey and milk until fully incorporated and smooth. Set aside.
