BREADS

Instructions:

  1. In a bowl mix together flour, salt, yeast, brown sugar and granulated sugar. Add water and knead dough for 10 to 15 minutes.

  2. Place dough in a greased bowl and cover with kitchen towel. Allow the dough to rest and rise for 1 1/2 hours.

  3. Transfer dough to a lightly floured surface and divide dough into equal pieces. Roll each piece into a smooth, round ball and place on a baking sheet. Let the dough rest for an additional 30 minutes.

  4. Towards the end of the dough resting period, prepare the water bath.

  5. Once the resting period is complete, poke a hole through the center of each dough ball and twirl with your fingers (the hole should be about 1 to 2 inches big).

  6. Dip entire bagel in the egg wash, then transfer bagel to the simmering water bath and cook for 2 minutes, flip and cook for an additional 2 minutes.

  7. Remove bagels from the water bath and place on a parchment lined baking sheet.

  8. Brush each bagel with remaining egg wash and top bagels with toppings of your choice and bake for 20 to 25 minutes.

  9. Remove bagels from the oven and let cool on a wire rack. Enjoy!
