Fluffernutter Cookies

Peanut butter and marshmallow fluff...the underrated duo. Yummy peanut butter cookie with swirls of marshmallow fluff, something you definitely need to try!

Ingredients:

  • 1 1/2 cup all purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3/4 cup chopped peanuts

  • 1/2 cup (1 stick) unsalted butter, room temperature

  • 3/4 cup brown sugar

  • 1/4 cup granulated sugar

  • 3/4 cup peanut butter

  • 1 egg, room temperature

  • 1 teaspoon vanilla extract

  • 3/4 cup marshmallow fluff

Instructions:

  1. Preheat oven 350 degrees. Line baking sheet with parchment paper and set aside.

  2. In a bowl add flour, salt and baking soda. Mix well then add chopped peanuts. Set aside.

  3. In a separate bowl, cream together butter, granulated sugar and brown sugar for 2 minutes. Add peanut butter, vanilla and egg and blend well.

  4. Add dry flour mix to wet ingredients and blend until fully incorporated.

  5. Add marshmallow fluff and gently fold in fluff 4 to 5 times (do not stir in the fluff).

  6. Scoop dough out and place on a baking sheet.

  7. Bake cookies for 10 minutes.

  8. Remove from the oven and let cookies rest for 10 minutes. Enjoy!
