Fluffernutter Cookies
Peanut butter and marshmallow fluff...the underrated duo. Yummy peanut butter cookie with swirls of marshmallow fluff, something you definitely need to try!
COOKIES
Ingredients:
1 1/2 cup all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup chopped peanuts
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup brown sugar
1/4 cup granulated sugar
3/4 cup peanut butter
1 egg, room temperature
1 teaspoon vanilla extract
3/4 cup marshmallow fluff
Instructions:
Preheat oven 350 degrees. Line baking sheet with parchment paper and set aside.
In a bowl add flour, salt and baking soda. Mix well then add chopped peanuts. Set aside.
In a separate bowl, cream together butter, granulated sugar and brown sugar for 2 minutes. Add peanut butter, vanilla and egg and blend well.
Add dry flour mix to wet ingredients and blend until fully incorporated.
Add marshmallow fluff and gently fold in fluff 4 to 5 times (do not stir in the fluff).
Scoop dough out and place on a baking sheet.
Bake cookies for 10 minutes.
Remove from the oven and let cookies rest for 10 minutes. Enjoy!
