Ingredients:
1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3 teaspoons poppy seeds (optional)
3/4 cup oil
1 cup granulated sugar
2 eggs
1/2 cup buttermilk
1 teaspoon extract (any flavor)
Instructions:
Preheat oven to 350 degrees.
Oil loaf pan and coat the entire inside pan with sugar.
Mix together flour, baking soda, salt and poppy seeds. Set aside.
In a separate bowl, mix together oil, sugar, eggs, extract and buttermilk.
Gradually add and gently fold in the flour mixture until there are no traces of flour.
Transfer batter to the loaf pan and spread evenly.
Bake for 40 to 50 minutes.
Remove from the oven and let the loaf rest in the pan for about 10 minutes. Run a butter knife around the loaf and remove from the pan and cool completely. Enjoy!
