Banana Pudding Cookies

Ingredients:

  • 2 1/2 cup all purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup chopped vanilla wafers

  • 1 1/2 cup white chocolate chips

  • 1 cup (2 sticks) unsalted butter, room temperature

  • 3/4 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 package (3.4 oz) banana pudding mix

  • 2 eggs, room temperature

  • 1 ripened banana

Instructions:

  1. Preheat oven 350 degrees. Line baking sheet with parchment paper and set aside.

  2. In a bowl add flour, baking soda and salt. Mix well then add vanilla wafers and white chocolate chips. Set aside.

  3. In a separate bowl, combine butter, granulated sugar and brown sugar for 3 minutes. Add pudding mix, eggs and ripened banana and blend well.

  4. Add dry flour mix to wet ingredients and blend until fully incorporated.

  5. Scoop dough (I used a 3 tablespoon scoop) out and place on a baking sheet.

  6. Bake the cookies for 15 minutes.

  7. Remove from the oven and let cookies rest for 10 minutes. Enjoy!
