Apple Pecan Crumb Cake Donuts
These flavorful baked donuts will go well with a nice cup of coffee.
DONUTS
Ingredients:
Donuts
1 cup all purpose flour
1/3 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
3/4 cup of small cubed Granny Smith apples (pat dry)
2 tablespoons unsalted butter, melted
1 egg
1 1/3 cup + 1 1/2 tablespoons milk (any kind, including buttermilk)
1 teaspoon vanilla extract
Optional: dust with powdered sugar or create a glaze (I used bourbon and powdered sugar)
Crumb Topping
1/3 cup light brown sugar
1/3 cup granulated sugar
1 1/2 teaspoon ground cinnamon
1/4 cup chopped pecan pieces
1/2 cup unsalted butter, melted
1 cup + 2 tablespoons all purpose flour
Instructions:
Crumb Topping
In a bowl, mix brown sugar, granulated sugar and cinnamon. Using a fork, stir in the melted butter and then add flour. Break up the mixture with a fork. Set aside.
Donuts
Preheat oven 350 degrees. Spray donut pan with nonstick cooking spray and set aside.
In a bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, salt and chopped apples.
In a separate bowl, whisk together egg, milk, butter and vanilla extract.
Add wet ingredients to dry flour mix and mix well, but do not overwork the batter.
Carefully spoon batter into donut cavity or pour batter in a plastic bag and pipe into the cavity instead. Only fill 1/2 of the way.
Add crumb mix and gently press into the batter.
Place the donut pan inside the oven and bake for 10 minutes.
Remove from the oven and allow to cool in the pan. Enjoy!
